1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/3 cup granulated sugar

2 (8 oz) packages cream cheese, softened

1 cup powdered sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon juice

½ cup sour cream

½ cup blueberry compote (optional, for topping)

Instructions
 

Preheat the oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.

      Press the mixture firmly into the bottom of the prepared baking pan to form an even crust layer. Bake for 10 minutes, then remove from the oven and set aside to cool.

        In another large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

          Gradually add the powdered sugar, beating until fully combined.

            Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and sour cream until smooth and creamy.

              Pour the cheesecake batter over the cooled graham cracker crust, smoothing out the top with a spatula.

                Bake in the preheated oven for 25-30 minutes or until the edges are set and the center slightly jiggles.

                  Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                    Once cooled, refrigerate for at least 4 hours, or overnight for the best results.

                      When ready to serve, carefully lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars.
