2 medium cucumbers, peeled and thinly sliced

3 medium carrots, grated

1 small red bell pepper, diced

1 small red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

1/2 teaspoon cumin powder

1/2 teaspoon smoked paprika

Instructions
 

Start by preparing the vegetables: peel and thinly slice the cucumbers, grate the carrots, dice the bell pepper, and slice the red onion. Place all these vegetables in a large mixing bowl.

    In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, cumin powder, smoked paprika, salt, and pepper until well combined to create a dressing.

      Pour the dressing over the mixed vegetables in the large bowl. Toss everything together gently until all the vegetables are well coated in the dressing.

        Add the chopped cilantro to the salad and toss again to distribute evenly.
