Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of sea salt. Stir until well blended.
In a separate bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the peanut butter mixture into the dry ingredients and stir until fully combined.
Fold in the dark chocolate chips and chopped nuts, distributing them evenly throughout the mixture.
Once mixed, use your hands or a cookie scoop to form the mixture into small bite-sized balls (about 1 inch in diameter).
Place the energy bites onto a parchment-lined baking sheet and refrigerate for about 30 minutes to set.
After chilling, transfer the bites to an airtight container, and store in the fridge for up to one week.
