In a large mixing bowl, combine the rolled oats, ground flaxseed, and sea salt. Stir to combine.
In a separate bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the peanut butter mixture into the dry ingredients and mix until everything is evenly coated.
Fold in the mini chocolate chips until distributed throughout the mixture.
Refrigerate the mixture for about 30 minutes to help it firm up.
Once chilled, scoop about a tablespoon of the mixture and roll it into a ball between your palms. Repeat until all the mixture is formed into bites.
Place the energy bites on a parchment-lined tray and refrigerate for at least another 30 minutes, or until firm.
