Pasta with Spinach and Asparagus

8 oz pasta (your choice, penne or fettuccine work well)

2 cups fresh spinach, roughly chopped

1 cup asparagus, trimmed and cut into 2-inch pieces

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

1/4 cup grated Parmesan cheese (plus more for serving)

1 tablespoon lemon juice

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Asparagus: In the same pot, heat 1 tablespoon of olive oil over medium heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender yet still crisp. Remove and set aside.

      Sauté the Spinach and Garlic: In the same pot, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add the chopped spinach and red pepper flakes. Cook until the spinach is wilted, about 2 minutes.

        Combine Ingredients: Return the asparagus to the pot with the spinach. Add the drained pasta and 1/4 cup of reserved pasta water to the pot. Add lemon juice, and Parmesan cheese, stirring everything together until well combined and creamy. If the pasta looks dry, add more reserved pasta water, a little at a time.

          Season and Serve: Taste and season with salt and pepper as needed. Serve hot, topped with additional Parmesan cheese and garnished with fresh basil leaves.
