1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 medium zucchini, diced

1 cup cherry tomatoes, halved

1 cup vegetable broth

1/2 cup fresh basil, chopped

Zest and juice of 1 lemon

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add Zucchini and Tomatoes: Stir in the diced zucchini and halved cherry tomatoes. Cook for about 5-7 minutes, until the vegetables are tender.

        Combine with Broth: Pour in the vegetable broth and allow to come to a gentle simmer. Reduce heat and cook for another 3-4 minutes until the broth slightly reduces.

          Mix in Orzo and Flavor: Add the cooked orzo to the skillet along with the lemon zest, lemon juice, and chopped basil. Toss everything together, adding a splash of reserved pasta water if needed to combine. Season with salt and pepper to taste.

            Serve: Turn off the heat and let sit for a minute to meld the flavors. Plate the dish and sprinkle with grated Parmesan cheese on top. Enjoy warm!
