12 oz (340g) penne pasta

1 tablespoon olive oil

12 oz (340g) smoked sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 zucchini, sliced

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

4 cups chicken broth

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1 cup spinach, fresh or frozen

Salt and pepper to taste

Grated Parmesan cheese for serving

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté until browned, about 5-7 minutes.

    Add diced onion and cook for another 2-3 minutes until translucent. Stir in minced garlic, cooking for 30 seconds until fragrant.

      Add chopped red bell pepper and zucchini to the pot. Sauté for another 3-4 minutes.

        Sprinkle in smoked paprika and dried oregano, stirring well to combine the spices with the vegetables and sausage.

          Pour in the chicken broth and diced tomatoes (including juices), then bring the mixture to a boil.

            Once boiling, add the penne pasta. Stir to ensure the pasta is submerged in the liquid. Cover the pot, reduce heat to medium-low, and simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and has absorbed most of the broth.

              Stir in the heavy cream and spinach, mixing until the spinach is wilted and the sauce is creamy. Season with salt and pepper to taste.

                Remove from heat and let it sit for a couple of minutes to thicken slightly.

                  Serve the pasta hot, garnished with grated Parmesan cheese on top.
