12 oz penne pasta

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup sliced pepperoni

1 teaspoon dried oregano

1 teaspoon dried basil

¼ teaspoon red pepper flakes (optional, for heat)

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

In a large pot or deep skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Stir in the minced garlic and cook for another 1 minute until fragrant.

      Add the diced red bell pepper and sliced pepperoni; sauté for an additional 2-3 minutes, mixing well.

        Sprinkle in the dried oregano, dried basil, and red pepper flakes (if using). Stir to combine all the spices with the vegetable mixture.

          Pour in the crushed tomatoes and vegetable broth, then bring the mixture to a boil.

            Once boiling, add the penne pasta and stir well. Reduce the heat to a simmer, cover the pot, and let it cook for about 12-15 minutes, or until the pasta is al dente, stirring occasionally.

              Remove the pot from heat and stir in the shredded mozzarella cheese until fully melted. Season with salt and pepper to taste.

                Allow the dish to sit for a few minutes, letting it thicken slightly before serving.

                  Garnish with fresh basil leaves and extra cheese if desired.
