12 oz (340g) spaghetti or your favorite pasta

4 cups vegetable broth

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 lemon, zested and juiced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

In a large pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

    Pour in the vegetable broth and bring it to a gentle boil.

      Add the spaghetti to the pot and cook according to package instructions, stirring occasionally, until al dente (usually around 8-10 minutes).

        Once the pasta is cooked, reduce the heat to low. Stir in the lemon zest, lemon juice, and heavy cream until well combined.

          Gradually add the freshly grated Parmesan cheese, stirring continuously until melted and creamy.

            Season the pasta with salt and pepper to taste. If the pasta appears too thick, you can add a splash of pasta water or extra vegetable broth to reach your desired consistency.
