1 lb Italian sausage (removed from casings)

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes (with juice)

4 cups chicken broth

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional for heat)

2 cups fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spatula, until browned, about 5-7 minutes. Remove excess fat if necessary.

    Add the diced onion and bell pepper to the pot, sautéing until the vegetables are softened, about 4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Pour in the diced tomatoes with their juice and add the chicken broth, followed by the orzo pasta. Sprinkle in the Italian seasoning and red pepper flakes if using. Stir to combine all ingredients well.

        Bring the mixture to a gentle boil, then reduce the heat to low, covering the pot. Simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally.

          Once the orzo is cooked, stir in the chopped spinach and let it wilt for a couple of minutes. Remove from heat and mix in the grated Parmesan cheese. Season with salt and pepper to taste.

            Serve hot, garnished with fresh basil leaves and an additional sprinkle of Parmesan cheese if desired.
