Ingredients

12 oz fettuccine pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup grated Parmesan cheese

1 cup baby spinach, roughly chopped

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Heat Olive Oil: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

Create the Sauce Base: Pour in the heavy cream and vegetable broth, stirring to combine. Bring to a gentle simmer for about 3-4 minutes, allowing the mixture to thicken slightly.

Incorporate Cheese and Herbs: Stir in the grated Parmesan cheese, sun-dried tomatoes, dried oregano, dried basil, salt, and pepper. Continue stirring until the cheese is melted and the sauce is creamy and well combined.

Add Spinach and Pasta: Gently fold the chopped spinach and cooked fettuccine into the sauce. If the sauce is too thick, add a little of the reserved pasta water until the desired consistency is reached. Stir until the spinach is wilted and everything is coated in the rich sauce.

Taste and Adjust: Give the pasta a taste and adjust the seasoning with more salt, pepper, or additional herbs if desired.

Serve: Divide the creamy pasta among serving plates, garnishing with fresh basil leaves for a pop of color and freshness.
