1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 can (20 oz) sliced pineapple, drained (reserve juice)

Maraschino cherries (optional)

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup whole milk

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Preheat your oven to 350°F (175°C).

    In a 9-inch round cake pan, pour the melted butter evenly across the bottom. Sprinkle the brown sugar over the melted butter to form a caramel layer.

      Arrange the pineapple slices in a circular pattern on top of the brown sugar mixture. If using, place maraschino cherries in the center of each pineapple ring.

        In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

          In a separate bowl, combine the reserved pineapple juice, milk, eggs, vanilla extract, and lemon zest. Mix well until combined.

            Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; some lumps are okay.

              Gently pour the batter over the arranged pineapple and cherries in the cake pan.

                Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

                  Once done, remove the cake from the oven and let it cool in the pan for about 10 minutes.

                    Carefully run a knife around the edge of the pan before inverting the cake onto a serving plate. Allow it to slide out gently to reveal the beautiful pineapple topping.
