2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, cold

1 tablespoon honey (optional for a hint of sweetness)

Preheat your oven to 450°F (230°C).

    In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt until well combined.

      Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

        If desired, add the honey to the buttermilk, then pour the cold buttermilk into the flour mixture. Stir gently with a fork until the dough begins to come together. Avoid overmixing.

          Lightly flour a clean surface and turn the dough out onto it. With floured hands, gently knead the dough a couple of times, just until it's cohesive. Pat it out into a 1-inch thick rectangle.

            Fold the dough in half, then gently pat it down again, repeating this process two or three times to create layers. This will help give the biscuits a flaky texture.

              Using a floured biscuit cutter or a glass, cut out biscuits from the dough, pressing straight down without twisting. Gather any scraps, re-pat, and cut out more biscuits.

                Place the biscuits onto a greased or parchment-lined baking sheet, placing them close together for soft sides or spaced apart for crisp sides.

                  Bake in the preheated oven for 12-15 minutes, or until they are golden brown on top.

                    Remove from the oven and let cool for a few minutes before serving.
