1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 1/2 cups fresh strawberries, hulled and sliced

2 tablespoons lemon juice

Fresh mint leaves (for garnish)

In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.

    Press the crumb mixture firmly into the bottom of 8 small dessert cups or a springform pan to form a base. Chill in the refrigerator while you prepare the cheesecake filling.

      In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

        Gradually add the powdered sugar and vanilla extract, mixing continuously until well combined.

          In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

            In a bowl, toss the sliced strawberries with lemon juice to enhance their flavor. Reserve a few slices for garnish.

              Gently fold the strawberries into the cheesecake mixture, leaving some chunks for texture.

                Spoon the cheesecake mixture over the chilled graham cracker crust in the dessert cups or pan, smoothing the tops with a spatula.

                  Cover and refrigerate for at least 4 hours, or until set.

                    Before serving, garnish each cheesecake with fresh strawberry slices and a sprig of mint.
