Ingredients

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 tablespoon vanilla extract

1 cup heavy whipping cream

¾ cup orange juice (freshly squeezed if possible)

Zest of 1 orange

1 tablespoon gelatin (optional, for firmer texture)

2 tablespoons cold water (if using gelatin)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are completely coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Chill in the freezer while you prepare the filling.

Bloom Gelatin (if using): In a small bowl, sprinkle the gelatin over cold water. Let it sit for about 5 minutes until it absorbs the water and becomes spongy.

Make the Filling: In a large mixing bowl, beat the softened cream cheese and powdered sugar with an electric mixer until creamy and smooth. Add the vanilla extract, orange juice, and orange zest, and continue to mix until well combined.

Whip the Cream: In another bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain, being careful not to deflate it.

Incorporate Gelatin (if using): If you’re using gelatin for a firmer texture, microwave the bloomed gelatin for 10-15 seconds until melted, then add it to the cream cheese mixture while stirring quickly to combine.

Combine and Pour: Once fully incorporated, pour the filling over the chilled crust and smooth the top with a spatula. Tap the pan gently on the countertop to remove any air bubbles.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow it to set properly.

Serve: Once set, carefully remove the cheesecake from the springform pan. Slice into wedges and serve as is or with additional orange zest or whipped cream on top for garnish.
