2 cups cooked lobster meat, chopped

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup celery, finely chopped

2 tablespoons fresh chives, finely chopped

Salt and pepper to taste

4 buttered split-top hot dog buns

2 tablespoons unsalted butter for grilling

Lettuce leaves for serving (optional)

Instructions
 

In a medium bowl, combine the chopped lobster meat, mayonnaise, Dijon mustard, lemon juice, celery, and chives.

    Gently fold the ingredients together until just combined. Be careful not to break the lobster meat too much.

      Season the mixture with salt and pepper to taste, adjusting as necessary.

        Heat a skillet over medium heat and add the butter. Once melted and bubbling, add the split-top buns, cut side down. Grill for about 2-3 minutes, or until golden brown and crispy.
