1 cup Arborio rice

4 cups vegetable broth

1 cup mixed mushrooms (shiitake, cremini, and chanterelles), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

1/2 cup grated Parmesan cheese (or a vegan alternative)

2 tablespoons truffle oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a saucepan, heat the vegetable broth over medium heat and keep it warm.

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the sliced mushrooms to the skillet and sauté until they become golden brown and release their moisture, about 5-7 minutes. Season with salt and pepper.

          Stir the Arborio rice into the skillet, mixing it well with the mushroom mixture, and toast the rice for 1-2 minutes until slightly translucent.

            Begin adding warm vegetable broth one ladle at a time, stirring frequently until each addition is nearly absorbed before adding the next. This process should take about 18-20 minutes until the rice is creamy and al dente.

              Once the rice is cooked, remove the skillet from heat. Stir in the butter, grated Parmesan cheese, and truffle oil to create a rich, creamy texture.

                Taste and adjust seasoning as needed with more salt and pepper.
