4 large carrots, peeled and grated

1/2 cup raisins

1/4 cup sliced almonds (toasted if preferred)

2 tablespoons fresh parsley, finely chopped

1 teaspoon ground cumin

1 teaspoon ground cinnamon

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Salt and black pepper to taste

Instructions
 

Begin by grating the peeled carrots using a box grater or food processor. Place them in a large mixing bowl.

    Add the raisins to the bowl of grated carrots. If you're using the almonds, add them now as well.

      In a small bowl, whisk together the olive oil, fresh lemon juice, ground cumin, ground cinnamon, salt, and black pepper until well combined.

        Pour the dressing over the carrot mixture and toss everything together until the carrots are evenly coated.

          Gently fold in the chopped parsley for a fresh hue and additional flavor.

            Allow the salad to sit for about 15-20 minutes at room temperature. This will help the flavors meld together beautifully.
