Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons pure vanilla extract

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup cocoa powder

1 cup semi-sweet chocolate chips

½ cup crushed peppermint candies

1 teaspoon peppermint extract

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

Beat in the eggs one at a time, mixing well after each addition, and then add the vanilla extract.

In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and cocoa powder.

Gradually mix the dry ingredients into the wet mixture until fully combined.

Fold in the chocolate chips and crushed peppermint candies, ensuring even distribution throughout the dough.

Last, add the peppermint extract and give the dough one final mix.

Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly cracked.

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 24 cookies
