1 cup graham cracker crumbs

3 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 cup heavy cream

1/4 cup granulated sugar (for topping)

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.

      Prepare Mini Cheesecake Molds: Line a muffin tin with cupcake liners. Press about 1 tablespoon of the crust mixture into the bottom of each liner, forming a solid base.

        Bake Crusts: Bake the crusts in the preheated oven for about 5-7 minutes, or until lightly golden. Remove and let cool while preparing the filling.

          Mix Filling: In a large mixing bowl, beat the softened cream cheese and ½ cup sugar until smooth. Add in the eggs, one at a time, mixing until fully combined.

            Add Flavorings: Mix in vanilla extract, lemon juice, and heavy cream until the mixture is smooth and creamy.

              Fill Cups: Pour the cheesecake filling evenly over the prepared crusts in the muffin tin, filling until just about full.

                Bake Cheesecakes: Bake for 20-25 minutes, or until the edges are set and the centers look slightly jiggly. Remove them from the oven and let them cool.

                  Chill: Once cooled to room temperature, place the cheesecakes in the fridge for at least 4 hours, or overnight for best results.

                    Caramelize the Sugar Topping: Just before serving, sprinkle a thin layer of ¼ cup granulated sugar over the top of each cheesecake. Using a kitchen torch, carefully caramelize the sugar until it becomes golden and crispy. If you don’t have a torch, you can place them under a broiler for just a few minutes, watching closely to avoid burning.
