Ingredients

1 cup graham cracker crumbs

2 tablespoons sugar

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup heavy cream

1/3 cup brown sugar (for topping)

Instructions

Preheat Oven: Preheat your oven to 325°F (160°C).

Prepare Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.

Form the Crust: Line a muffin tin with paper liners or use silicone molds. Evenly distribute the crumb mixture into each mold, pressing down firmly to form a crust.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in the vanilla extract and heavy cream until fully combined.

Fill the Molds: Pour the cheesecake batter over the crusts in the muffin tin, filling them about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.

Cool Down: Once baked, remove the cheesecakes from the oven and let them cool at room temperature for about 30 minutes. Afterward, refrigerate them for at least 4 hours, or overnight for best results.

Caramelize the Sugars: When ready to serve, sprinkle a thin layer of brown sugar over the top of each cheesecake. Using a kitchen torch, gently caramelize the sugar until it forms a crispy top. If you don't have a torch, broil them in the oven for about 1-2 minutes, keeping a close eye to avoid burning.

Serve: Allow the caramelized top to harden for a minute or two before serving.

Prep Time: 20 minutes | Total Time: 5 hours (includes cooling and chilling) | Servings: 12 mini cheesecakes.

                      - Presentation Tips: Garnish each mini cheesecake with a fresh berry or a mint leaf for a pop of color. Serve them on a decorative platter to enhance their appeal.
