2 ripe bananas, mashed

1/4 cup unsweetened applesauce

1/3 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup all-purpose flour

1/2 teaspoon cinnamon

1/2 cup mini chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray it lightly with cooking spray.

    In a large mixing bowl, combine the mashed bananas, applesauce, and brown sugar. Mix them until fully blended.

      Add the egg and vanilla extract into the banana mixture, stirring until smooth.

        In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cinnamon until well combined.

          Gradually add the dry ingredients to the banana mixture, stirring gently until just combined—do not overmix!

            If using mini chocolate chips, fold them into the batter at this stage.

              Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

                Bake in the preheated oven for 10-12 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                  Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
