Mediterranean-Style Baked Fish Made Simple with Claudy

Ingredients
  

4 white fish fillets (such as tilapia, cod, or haddock)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 lemon, zested and juiced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.

    In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, lemon zest, juice, salt, and pepper to create a marinade.

      Place the fish fillets in the prepared baking dish and brush both sides generously with the marinade.

        Scatter the halved cherry tomatoes and red onion slices around the fish, then add the sliced Kalamata olives on top.

          Drizzle any remaining marinade over the tomatoes and onion.

            Cover the baking dish with aluminum foil to retain moisture, then place it in the preheated oven.

              Bake for 20-25 minutes until the fish is flaky and cooked through.

                Remove the foil during the last 5 minutes of baking for a slightly crispier top if desired.

                  Once done, remove from the oven and garnish with fresh parsley before serving.
