4 cod fillets (about 6 oz each)

2 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.

      Place the cod fillets in a baking dish and pour the marinade evenly over them, ensuring they're well coated. Let them marinate for about 15 minutes.

        Scatter the halved cherry tomatoes and sliced Kalamata olives around the cod in the baking dish.

          Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork. The tomatoes should be blistered and juicy.

            Once cooked, remove from the oven and garnish with chopped fresh parsley and additional lemon slices before serving.
