Mediterranean Stuffed Chicken Breasts

4 boneless, skinless chicken breasts

1 cup spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped

1/4 cup black olives, pitted and sliced

1/4 cup pine nuts, toasted

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

1 lemon, juiced

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes, black olives, pine nuts, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.

      Take each chicken breast and use a sharp knife to create a pocket by slicing them horizontally, careful not to cut all the way through.

        Stuff each pocket with the Mediterranean filling, evenly distributing the mixture among the chicken breasts.

          In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the outside of the chicken breasts with salt and pepper, then place them in the skillet. Sear each side of the chicken for about 3-4 minutes until golden brown.

            Carefully squeeze lemon juice over the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

              Remove the skillet from the oven and let the chicken rest for 5 minutes.

                Garnish the stuffed chicken breasts with fresh parsley before serving.
