In a large baking dish, spread the sliced zucchinis evenly across the bottom.
In a medium bowl, mix the diced red bell pepper, onion, minced garlic, and cherry tomatoes. Add half of the olive oil, oregano, basil, salt, and pepper, then stir to combine. Spread the vegetable mixture over the zucchini layer.
In another bowl, season the chicken breasts with the remaining olive oil, salt, and pepper. Place the seasoned chicken breasts on top of the vegetable mixture in the baking dish.
Crumble the feta cheese evenly over the chicken and vegetables.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the zucchinis are tender.
Once done, let it cool for a few minutes. Garnish with fresh parsley before serving.
