In a large mixing bowl, combine the ground chicken, breadcrumbs, diced onion, minced garlic, cooked quinoa, feta cheese, parsley, mint, oregano, cumin, beaten egg, salt, and pepper. Use your hands to mix everything until well combined.
Once the mixture is ready, divide it into 8 equal portions and shape each into a patty about 1 inch thick.
Heat a large skillet over medium-high heat and add a drizzle of olive oil.
Once the oil is hot, carefully place the patties in the skillet, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Once cooked, remove the patties from the skillet and let them rest on a paper towel to absorb any excess oil.
Serve warm with a side of tzatziki sauce, Greek salad, or stuffed into pita bread with fresh veggies.
