4 fillets of white fish (like cod or snapper)

2 lemons (zested and sliced)

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and halved

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix together the olive oil, minced garlic, lemon zest, oregano, thyme, smoked paprika, salt, and pepper to taste.

      Line a baking dish with parchment paper or lightly grease it with olive oil.

        Place the fish fillets in the center of the baking dish. Brush each fillet generously with the herb and oil mixture.

          Scatter the lemon slices, cherry tomatoes, and olives around the fish in the baking dish. Drizzle any remaining herb oil over the vegetables.

            Bake in the preheated oven for about 20-25 minutes, or until the fish flakes easily with a fork and the vegetables are tender.

              Once cooked, remove the dish from the oven and let it rest for a couple of minutes. Garnish with fresh parsley before serving.
