2 chicken breasts, boneless and skinless

8 oz. fettuccine pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 cup grated parmesan cheese

2 cups fresh spinach

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions. Drain and set aside.

    While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken breasts and sear for about 6-7 minutes on each side until cooked through and golden brown. Remove from the skillet and set aside to rest.

        In the same skillet, add the minced garlic and sauté for about 1 minute, until fragrant.

          Pour in the heavy cream and bring to a simmer. Stir in the chopped sun-dried tomatoes and continue to cook for about 2-3 minutes.

            Lower the heat and mix in the grated parmesan cheese until melted and creamy. Add the fresh spinach and stir until wilted.

              Slice the rested chicken into strips and add it to the sauce, mixing everything gently.

                Toss the cooked pasta in the skillet with the sauce until well coated. Adjust seasoning with salt and pepper if needed.

                  Serve immediately, garnished with fresh basil leaves for a burst of flavor and color.
