Ingredients
  

1 ripe mango, diced

1 cup canned black beans, rinsed and drained

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño, deseeded and minced (optional for heat)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the diced mango, black beans, red bell pepper, red onion, and jalapeño (if using).

    Add the chopped cilantro to the bowl, mixing well with the other ingredients.

      In a separate small bowl, whisk together the lime juice and olive oil until emulsified.

        Pour the dressing over the mango and bean mixture.

          Gently toss everything together until well combined, being careful not to mash the mango.

            Season with salt and pepper to taste, and adjust lime juice if desired.

              Allow the salsa to sit for at least 15 minutes to let the flavors meld together before serving.
