2 cups mashed potatoes (cold or leftover)

1 large egg

1/2 cup all-purpose flour

1/2 cup shredded cheddar cheese (plus extra for topping)

1/4 cup green onions, chopped

1/4 cup cooked bacon bits (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil (for the waffle iron)

Instructions
 

In a large mixing bowl, combine the cold mashed potatoes, egg, and flour. Mix until well incorporated.

    Add the shredded cheddar cheese, chopped green onions, bacon bits (if using), garlic powder, onion powder, salt, and pepper. Stir until everything is evenly combined.

      Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray or olive oil.

        Once hot, spoon a generous amount of the potato mixture into the center of the waffle iron (about 1/3 cup, depending on the size of your waffle maker).

          Close the lid and cook until the waffles are crispy and golden brown, about 6-8 minutes. The cooking time may vary based on your waffle iron.

            Carefully remove the waffles and keep them warm in a low oven (around 200°F) while you cook the remaining batter.

              To serve, place the waffles on individual plates, top with extra shredded cheese, and sprinkle with additional green onions. You can also add a dollop of sour cream or a drizzle of your favorite sauce if desired.
