4 large russet potatoes

1 lb sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup green onions, sliced

1/4 cup crispy bacon bits (optional)

2 tablespoons butter

Preheat your oven to 425°F (220°C).

    Scrub the russet potatoes under running water and pat them dry. Pierce each potato several times with a fork to allow steam to escape during baking.

      Rub each potato with olive oil, then sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until the skins are crispy and a fork easily pierces through the flesh.

        While the potatoes are baking, heat a skillet over medium-high heat. Add olive oil and then the seasoned steak bites (garlic powder, smoked paprika, salt, and pepper). Cook for about 5-7 minutes, stirring occasionally, until the steak is browned and cooked to your preferred doneness (medium-rare is around 135°F). Remove from heat.

          Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Slice each potato open lengthwise and fluff the insides with a fork.

            Add a tablespoon of butter to each potato, followed by a generous scoop of sour cream, and then the shredded cheddar cheese.

              Top each potato with the sizzling steak bites, additional cheese if desired, bacon bits, and sliced green onions.

                Return the loaded potatoes to the oven for another 5 minutes to melt the cheese and heat everything through.
