4 large russet potatoes

1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, chopped

1/4 cup crispy bacon bits (optional)

1 tablespoon butter

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Scrub the russet potatoes clean and pat them dry. Prick each potato several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until the skins are crisp and a fork easily pierces the flesh.

      Prepare the Steak Bites: While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season the sirloin steak cubes with salt, black pepper, garlic powder, and smoked paprika. Once the oil is hot, add the steak bites to the skillet and sear for 3-4 minutes until browned on all sides and cooked to your desired doneness. Remove from heat and set aside.

        Prepare the Loaded Toppings: Once the potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato open lengthwise and gently squeeze the ends to fluff the insides.
