2 cans (15 oz each) white beans (cannellini or navy), drained and rinsed

4 cups vegetable broth

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

1 large lemon (zested and juiced)

1 cup carrots, diced

1 cup celery, diced

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or microgreens for garnish

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until it becomes translucent.

    Stir in the minced garlic, diced carrots, and celery. Cook for an additional 5 minutes, allowing the vegetables to soften.

      Add the chopped rosemary to the pot and mix well, cooking for another minute to release the herb's flavor.

        Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 10 minutes.

          Add the white beans to the pot, along with the lemon juice and zest. Stir to combine and simmer for another 5 minutes.

            Season the soup with salt and pepper to taste. For a creamier soup, use an immersion blender to partially blend the soup, leaving some beans whole for texture.

              Once the soup is heated through, remove it from the heat and let it sit for a couple of minutes to allow flavors to meld.

                Serve hot, garnished with fresh parsley or microgreens for an added touch.
