Lemon Parmesan Asparagus Pasta

8 oz spaghetti or fettuccine

1 bunch asparagus, trimmed and cut into 2-inch pieces

2 tablespoons olive oil

2 garlic cloves, minced

1 lemon, zested and juiced

½ cup grated Parmesan cheese, plus extra for serving

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the pasta according to the package instructions in a large pot of salted boiling water. Add the asparagus during the last 2-3 minutes of cooking. Drain the pasta and asparagus, reserving ½ cup of pasta water.

    In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add the cooked pasta and asparagus to the skillet. Toss to combine with the garlic and oil.

        Stir in the lemon zest, lemon juice, and grated Parmesan cheese. If the pasta seems dry, add some reserved pasta water a little at a time until you reach your desired consistency.

          Season the pasta with crushed red pepper flakes, salt, and pepper to taste. Toss everything together until well mixed.

            Serve immediately, topped with extra grated Parmesan and fresh basil leaves for garnish.
