2 cans (5 oz each) tuna in water, drained

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped green onions

1/4 cup mayonnaise

1 large egg, lightly beaten

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil for frying

In a large mixing bowl, combine the drained tuna, breadcrumbs, chopped green onions, mayonnaise, beaten egg, lemon juice, minced garlic, Dijon mustard, paprika, salt, and pepper. Mix until well combined.

    Divide the mixture into equal portions and shape them into patties, about 2-3 inches in diameter, and place them on a plate.

      Heat a skillet over medium heat and add enough olive oil to coat the bottom of the pan.

        Once the oil is hot, carefully place the tuna patties in the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

          Once cooked, transfer the tuna cakes to a plate lined with paper towels to absorb any excess oil.

            Serve the lemon garlic tuna cakes warm, garnished with additional lemon wedges and a sprinkle of fresh parsley if desired.
