Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, paprika, oregano, salt, and pepper. Stir until well mixed.
Add the shrimp to the bowl, tossing to coat them evenly with the marinade. Let them marinate for about 15 minutes for maximum flavor.
Spread the marinated shrimp in a single layer on a baking sheet lined with parchment paper for easy cleanup.
Roast the shrimp in the preheated oven for 8-10 minutes, or until they are pink and opaque, and slightly curled. Be careful not to overcook.
Remove the shrimp from the oven and transfer to a serving platter.
Garnish the shrimp with freshly chopped parsley and serve with lemon wedges on the side for an extra zing.
