Lemon Garlic Roasted Chicken

Ingredients
  

1 whole chicken (about 4-5 pounds)

4 tablespoons olive oil

4 cloves garlic, minced

2 lemons (1 zested and juiced, 1 sliced)

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1 medium onion, quartered

4 medium carrots, cut into chunks

1 cup low-sodium chicken broth

Instructions
 

Preheat your oven to 425°F (220°C).

    In a small bowl, mix together olive oil, minced garlic, lemon zest, lemon juice, chopped rosemary, chopped thyme, salt, and pepper to create a marinade.

      Pat the chicken dry with paper towels and place it in a roasting pan. Gently loosen the skin from the chicken breast and rub half of the marinade under the skin, spreading it evenly. Rub the remaining marinade all over the outside of the chicken.

        Stuff the cavity of the chicken with the quartered onion and a few lemon slices. Tie the legs together with kitchen twine and tuck the wing tips under the bird’s body.

          Arrange the carrot chunks around the chicken in the roasting pan. Pour the chicken broth over the vegetables.

            Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when checked at the thickest part of the thigh. Baste the chicken with pan juices every 20 minutes for an extra moist result.

              Once cooked, remove the chicken from the oven and allow it to rest for 10-15 minutes before carving.
