Ingredients

1 bunch of fresh asparagus (about 1 pound), trimmed

3 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 425°F (220°C).

On a large baking sheet, place the trimmed asparagus in a single layer.

In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper.

Drizzle the garlic-lemon mixture over the asparagus, making sure to evenly coat each spear.

Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly crispy on the edges.

If using Parmesan cheese, sprinkle it over the asparagus during the last 2 minutes of roasting to allow it to melt slightly.

Remove from the oven and transfer the asparagus to a serving platter.

Garnish with chopped fresh parsley for a pop of color. Serve immediately.
