1 cup all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cream cheese, softened

1/4 cup unsalted butter, softened

2 large eggs

1/4 cup milk

Zest of 1 lemon

2 tablespoons lemon juice

1 teaspoon vanilla extract

1/4 cup powdered sugar (for glaze, optional)

Additional lemon juice (for glaze, optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      In a large mixing bowl, beat the softened cream cheese and butter together using an electric mixer until creamy and smooth.

        Add in the eggs one at a time, beating well after each addition.

          Stir in the milk, lemon zest, lemon juice, and vanilla extract until everything is well incorporated.

            Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

              Using a scoop or spoon, fill the muffin cups about two-thirds full with the batter.

                Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

                  Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                    Optional Glaze:

                      While the muffins are cooling, prepare the glaze by mixing the powdered sugar with just enough lemon juice to achieve a smooth, pourable consistency.

                        Drizzle the glaze over the cooled muffins once they are at room temperature.
