1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup cream cheese, softened

1 cup granulated sugar

2 large eggs

Zest of 1 large lemon

2 tablespoons freshly squeezed lemon juice

1 teaspoon vanilla extract

½ cup powdered sugar (for topping, optional)

Extra lemon zest (for garnish, optional)

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, beat the softened butter and cream cheese together until creamy and smooth using an electric mixer.

        Gradually add granulated sugar to the butter and cream cheese mixture, continuing to beat until it is light and fluffy (about 3-4 minutes).

          Add the eggs one at a time, mixing well after each addition. Then mix in the lemon zest, lemon juice, and vanilla extract until fully incorporated.

            Slowly add the dry ingredients into the wet mixture, mixing just until combined. Be careful not to overmix; it’s okay if a few lumps remain.

              Using a spoon or cookie scoop, divide the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the middle comes out clean.

                  Once the muffins are done, remove them from the oven and allow them to cool in the pan for about 5 minutes. Then transfer to a wire rack to cool completely.

                    If desired, mix powdered sugar with lemon juice to make a simple glaze and drizzle over the cooled muffins. Garnish with extra lemon zest for a pop of color and flavor.
