Ingredients

1 pre-made 9-inch pie crust

1 cup granulated sugar

1/4 cup unsalted butter, melted

3 large eggs

1/4 cup fresh lemon juice

Zest of 1 lemon

1 tablespoon all-purpose flour

1/4 teaspoon salt

1 teaspoon vanilla extract

Powdered sugar, for dusting (optional)

Instructions

Preheat your oven to 350°F (175°C). Place the pre-made pie crust into a 9-inch pie pan, crimping the edges as desired.

In a mixing bowl, combine the granulated sugar and melted butter. Whisk together until smooth.

Add the eggs one at a time, whisking well after each addition. Make sure the mixture is creamy and well combined.

Stir in the fresh lemon juice, lemon zest, flour, salt, and vanilla extract. Whisk until the mixture is completely blended and smooth.

Pour the lemon filling into the prepared pie crust, spreading it evenly.

Bake in the preheated oven for 30-35 minutes, or until the filling is set and has a slight jiggle in the center. The top will turn a light golden color.

Once baked, remove the pie from the oven and allow it to cool at room temperature for at least 1 hour, then refrigerate for an additional hour to chill.

Before serving, dust the top with powdered sugar for an elegant finish if desired.
