1 cup unsalted butter, softened

1 cup granulated sugar

2 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon baking powder

2 tablespoons lemon zest (about 2 lemons)

2 large eggs

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

1 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

      Gradually add the flour, salt, and baking powder to the butter mixture. Mix until just combined.

        Add lemon zest and stir in the eggs, one at a time, mixing well after each addition. Pour in the lemon juice and continue to mix until the batter is smooth.

          Pour the batter into the prepared baking pan, spreading it evenly.

            Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

              Once baked, remove from the oven and let cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.

                Once cooled, dust the top with powdered sugar and cut into squares or bars.
