9 lasagna noodles

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced

1 bag (10 ounces) fresh spinach

2 cups ricotta cheese

1 egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a clean kitchen towel.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.

        Stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are softened, about 5-7 minutes.

          Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Season with salt, pepper, oregano, and basil. Remove from heat and set aside.

            In a mixing bowl, combine the ricotta cheese, egg, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.

              Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

                Begin layering: Place 3 lasagna noodles lengthwise on top of the sauce, followed by half of the ricotta mixture, half of the sautéed spinach and mushrooms, and a layer of marinara sauce. Repeat the layering process.

                  For the final layer, top the last three noodles with remaining marinara sauce and sprinkle the rest of the mozzarella and Parmesan cheeses on top.

                    Cover with aluminum foil (to prevent sticking, you can spray foil with cooking spray) and bake in preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                      Once done, let it cool for about 10-15 minutes before slicing.
