Ingredients

1 lb ground beef (90% lean)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

¼ cup soy sauce (low sodium)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 green onions, chopped

1 tablespoon gochugaru (Korean red pepper flakes)

2 cups cooked jasmine rice

1 cup broccoli florets, steamed

1 carrot, julienned

Sesame seeds for garnish

Lettuce leaves for serving (optional)

Instructions

Cook the Beef: In a large skillet, heat sesame oil over medium-high heat. Add the ground beef and cook, breaking it up with a spatula until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Add Aromatics: Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Create the Sauce: In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, and gochugaru until combined. Pour this mixture over the cooked beef in the skillet, stirring to coat evenly. Allow to simmer for 3-4 minutes to let the flavors meld.

Prepare Vegetables: While the beef is simmering, steam the broccoli florets until bright green and tender, about 4 minutes. Add the julienned carrots for the last minute of steaming.

Assemble the Bowl: Start with a base of jasmine rice in each bowl. Top with the Korean ground beef mixture, steamed broccoli, and carrots. Sprinkle with chopped green onions and a pinch of sesame seeds for garnish.

Serve: For an extra touch, consider serving in a leaf of lettuce as a garnish for a fresh wrap experience!
