3 medium-sized potatoes, peeled and grated

1 cup mozzarella cheese, grated

1/2 cup green onions, finely chopped

1/2 cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1/2 teaspoon black pepper

Salt to taste

Vegetable oil for frying

Optional: Spicy dipping sauce (gochujang mixed with soy sauce and a pinch of sugar)

Instructions
 

Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture. This helps to ensure that the pancakes are crispy.

    In a large mixing bowl, combine the grated potatoes, mozzarella cheese, green onions, all-purpose flour, egg, garlic powder, black pepper, and salt. Mix everything thoroughly until well combined.

      Heat about 1/4 inch of vegetable oil in a large non-stick skillet over medium heat.

        Once the oil is hot, drop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of the spoon to form pancakes about 1/2 inch thick.

          Fry the pancakes for 3-4 minutes on one side until golden brown, then gently flip and cook for another 3-4 minutes on the other side. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

            Transfer the cooked pancakes to a paper towel-lined plate to absorb excess oil.

              Serve the cheesy potato pancakes warm with the optional spicy dipping sauce on the side.
