4 medium carrots, julienned

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon soy sauce

1 teaspoon sugar

1 clove garlic, minced

1 tablespoon sesame seeds, toasted

1 green onion, finely chopped

A pinch of red pepper flakes (adjust to taste)

Instructions
 

Start by peeling the carrots and then julienne them into thin strips. If you have a julienne peeler or a mandoline, this will make the process easier.

    In a large mixing bowl, combine the julienned carrots and a pinch of salt. Toss to lightly coat the carrots and set aside for about 10 minutes to soften slightly.

      In a separate bowl, whisk together the sesame oil, rice vinegar, soy sauce, sugar, minced garlic, and red pepper flakes until well combined.

        After 10 minutes, drain any excess moisture released from the carrots.

          Pour the dressing over the carrots and mix until all the carrot strips are well coated.

            Add the toasted sesame seeds and chopped green onion to the bowl, reserving a few for garnish. Toss gently to incorporate all the flavors.

              Taste and adjust seasoning if necessary, adding more salt or sugar according to your preference.

                Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld beautifully.

                  Before serving, give the salad one last toss and garnish with the remaining green onions and additional sesame seeds.
