Ingredients
  

2 medium zucchinis

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup marinara sauce (sugar-free)

Fresh basil or parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Cut the zucchinis into thick slices (about 1/2 inch) and lightly scoop out the center to create a small well for toppings; discard the scooped-out flesh or save for another use.

      In a large bowl, combine the shredded mozzarella, grated Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and black pepper. Stir until all ingredients are well mixed.

        Spoon the cheese mixture into the wells of each zucchini slice, mounding it slightly on top.

          Arrange the zucchini pizza bites on the prepared baking sheet and bake in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and golden brown.

            Carefully remove the zucchini bites from the oven and top each with a spoonful of marinara sauce.

              Return the bites to the oven for an additional 5 minutes to warm the sauce.

                Once done, remove from the oven and let cool for a couple of minutes. Garnish with fresh basil or parsley before serving.
