Kashmiri Pink Chai Recipe

Ingredients
  

4 cups water

4 tablespoons green tea leaves (special Kashmiri tea leaves, if available)

1/2 teaspoon baking soda

2 cups milk (or almond milk for a vegan option)

1/4 cup sugar (adjust to taste)

1 teaspoon crushed cardamom

1/4 teaspoon salt

Chopped pistachios and almonds (for garnishing)

A pinch of saffron strands (optional)

Instructions
 

In a heavy-bottomed saucepan, bring 4 cups of water to a boil.

    Once boiling, add the green tea leaves and baking soda. The baking soda helps develop the unique pink color of the tea.

      Reduce the heat and let it simmer for about 15-20 minutes, stirring occasionally. You’ll notice the liquid reducing and darkening.

        Once the mixture has thickened and turned a deep red-brown, strain the tea into a separate bowl, discarding the leaves.

          Return the strained tea to the saucepan and add in the milk slowly while stirring. If you want an even creamier texture, use warm milk.

            Sweeten your chai with sugar, add cardamom, and a pinch of salt. Allow the mixture to simmer for about 5-10 more minutes, letting the flavors meld together.

              Stir in saffron strands, if using, and mix well.

                Remove from heat and let it cool for a couple of minutes before serving.

                  Serve the chai hot, garnished with chopped pistachios and almonds for a delightful crunch.
