Ingredients

1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg

1/4 cup milk

1 cup marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 tablespoon fresh basil, chopped

1 tablespoon lemon zest

Salt and pepper to taste

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, fresh parsley, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Add Wet Ingredients: In a separate small bowl, whisk together the egg and milk. Pour this mixture into the meat mixture and stir until just combined. Be careful not to overmix.

Form Meatballs: Using your hands, shape the mixture into golf ball-sized meatballs (about 1.5 inches in diameter). Place them on the prepared baking sheet, leaving space between each meatball.

Bake Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and golden brown on the outside.

Prepare Creamy Herbed Ricotta: While the meatballs are baking, prepare the herbed ricotta by mixing together the ricotta cheese, fresh basil, lemon zest, and a pinch of salt and pepper in a bowl. Stir until smooth and combined.

Warm the Marinara: Once the meatballs are out of the oven, warm the marinara sauce in a saucepan over low heat.

Serve: To serve, place the meatballs on a plate, drizzle with warm marinara sauce, and top with generous dollops of the herbed ricotta.
